These are quite substantial dishes, although top modern-day chefs have brought them up to date with a lighter touch more in keeping with the times. And, as a result, there are currently 24 Michelin-starred restaurants to be found in Burgundy, including three boasting the coveted three stars. Apart from its vineyards Burgundy abounds with excellent raw material for the kitchen, such as Charolais cattle that graze on the lush pastures throughout the region, free-range Bourg-en-Bresse chickens fed on maize, with their tender natural meat, snails, pigeons, quails, boar, venison, mushrooms and river fish, all add up to a tasty menu.
